Sweet Potato and Apple Pie

Makes one 9-inch pie


2 eggs
1 cup evaporated milk
1/2 cup half-and-half
11/4 cups cooked and mashed sweet potatoes
1 Cortland apple, peeled and grated
1/3 cup light brown sugar
1/3 cup granulated sugar
Pinch of salt
11/4 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1 9-inch unbaked pie shell
Whipped cream, for serving

Preparation - Directions

1. Preheat oven to 375°F. Beat the eggs in a large bowl until light and fluffy. Add the
remaining ingredients (excluding the pie shell and whipped cream) in order given and beat until the mixture is smooth.
2. Pour the mixture into the pie shell. Bake for 35–40 minutes or until the filling has set.
3. Cool, then serve cut into wedges with whipped cream.
