Baked Beans and Farro

Serves 8

A potluck calls for baked beans in my book, but you can add a new taste twist by including farro or wheat berries for an even more nutritious dish.

1 cup dried beans (whatever you have)
1 cup farro or wheat berries
1 onion studded with 10 whole cloves
2 whole bay leaves
1 meaty ham bone
2 heaping tablespoons Dijon mustard
½ cup molasses
½ cup ketchup
Salt, to taste
Grinding of black pepper

1. Preheat oven to 325°F. Place the beans, farro, onion, bay leaves and ham bone in a bean pot or other heavy-duty oven pot, such as a Dutch oven.

2. In a bowl, mix together 3 cups water, mustard, molasses, ketchup, salt and pepper. Pour over the beans and ham bone.

3. Cover the pot and place in the oven for 2½ hours or until the beans are tender but not mushy.

4. Remove the ham bone and onion. Scrape any meat off the bone and add to the beans. Remove the cloves from the onion and discard them. Cut the onion into small pieces and add to the beans.
