Mini Sweet Bell Pepper Boats

Mini sweet bell peppers are the perfect container for a spicy filling and look especially festive for the holidays.
Ingredients:
3 tablespoons extra-virgin olive oil, divided
6 mini, assorted color, sweet bell peppers
¼ pound Genoa salami with peppercorns, diced
6 imported black, oil-cured olives, pitted and chopped
1 tablespoon fresh thyme leaves
Salt, to taste
Freshly ground black pepper, to taste
¼ cup grated Asiago cheese
Minced parsley, for garnish
