Very Cherry Berry Salad

Cherries are a great snack as is— munched on cold from the refrigerator­­—but they also take over the spotlight in this gorgeous refreshing summer salad

Grab them while you can! That is how I feel about cherries, and I keep bowlfuls at all times during the season. Cherries are a great snack as is— munched on cold from the refrigerator­­—but they also take over the spotlight in this gorgeous refreshing summer salad.

Ingredients:

1/2 cup freshly squeezed lemon juice
1/3 cup warm honey
¼ teaspoon salt
2 cups Bing cherries, pitted
2 cups Queen Ann cherries, pitted
1 cup blueberries
1 cup raspberries
¼ cup minced fresh mint leaves

Directions:

1. To make the dressing, combine the lemon juice, honey and salt in a jar and shake well. Set aside.

2. In a bowl, combine the cherries, blueberries and raspberries. Add the dressing and toss gently so as not to mash the berries. Sprinkle the mint over the salad and toss again.

3. Cover and let sit 20 minutes at room temperature before serving. Serves 4.
