Spinach and Melon Salad

Serves 4–6 

This cool spinach salad with cubes of sweet honeydew and cantaloupe melon is almost like eating dessert!

Dressing             

1/4 cup white balsamic vinegar
Juice and zest of 1 large orange
2 tablespoons lime juice
2 tablespoons extra-virgin olive oil
2 tablespoons minced spring onions
1/2 teaspoon salt
1 teaspoon dry mustard

Salad

4 cups fresh spinach, washed, stemmed and spun dry
3 cups cubed cantaloupe
2 cups cubed honeydew melon

1. In a small bowl, whisk the dressing ingredients together until well emulsified.
2. Place spinach and melon cubes in a large bowl. Drizzle with dressing and toss to coat. Serve immediately.
